Quick Lunch Ideas: Leftovers Sandwiches
Want to turn leftovers into a great sandwiches? Want a frugal solution for those leftovers? Want something the kids will love? Try BLTs, Meatloaf sandwiches, and Meatball hero's.
#1: BLT (Bacon, Lettuce, and Tomato) Sandwiches
Leftover salad fixings? Better use it fast. Extra bacon from breakfast (I deliberately make extra and hide it with the bacon hounds in this house)? Time to make BLTs for lunch.
Here's what you need:
- Bacon
- Tomatoes
- Lettuce
- Mayo
- Toasted bread
- Dash of salt and pepper
Here's what to do:
- Slice the tomatoes thin
- 1-2 leaves of lettuce
- Mayo on the toasted bread
- 2-4 slices of bacon
- Add salt and pepper
Serve with chips and pickle slice. The kids usually ask for more.
#2: Meatloaf Sandwiches
Okay, you made my meatloaf recipe (Dinner Idea: Homemade Meatloaf), and you have leftovers. Make some sandwiches . . .
Here's what you need:
- Leftover meatloaf
- Ketchup
- Bread
Here's what to do:
- Slice meatloaf to taste
- Heat meatloaf if desired
- Add ketchup to taste
- Toast bread if desired
Another big hit with the kids.
#3: Meatball Sandwiches
Last night you made my Homemade Italian Gravy and Homemade Italian Meatballs and there are plenty of leftovers . . .
Here's what you need:
- Leftover gravy and meatballs
- Italian bread
- Grated cheese
- Mozzarella
Here's what to do:
- Heat up the gravy and meatballs
- Toast Italian bread
- Fill bread with gravy and meatballs
- Put cheese(s) on hot gravy and meatballs
The best part is these recipes are not only quick, easy, and frugal-- the kids love them!
