Quick Dinner Idea: Sausage, Peppers, and Onions
Over the weekend we had all the kids in residence (that's a divorced parent's code for visitation with us), so we go out of our way to make different and interesting meals.
We made a fun and frugal meal that the kids enjoyed and was easy prep and cooked on the grill. Italian style sausage, peppers, and onions. I had picked up the sausages on special . . . 18 for under $3-- add rolls, peppers, and onions and the total was around $10 for dinner for six. The left over sausages were chopped up the next day and went into a scrambled egg breakfast.
Here's what you need:
- About 18 Italian sausages (served six)
- 3 peppers (I used a yellow, green, and red variety pack)
- 2-3 onions
- 1/4 cup olive oil
- Dash of salt and pepper (I like fresh ground)
- Prep time 3-5 minutes
Here's what to do:
- Make a foil "bowl" and fill with chopped peppers and onions
- Add salt and pepper
- Add olive oil
- Put on hot grill in center over the coals with grill cover on (the grill flavor is great!)
- After the peppers and onion mix has cooked 20 minutes-- occasionally stirred, put sausages on the grill
- Rotate sausages occasionally and cook at least 10 minutes or until browned (or burnt in my wife's case) to taste
Serve on Italian bread sandwich rolls.
