Four Quick and Easy BBQ Grill Recipes
Chicken (Asian style)
Here's what you need:
- 2-3 lbs of washed chicken breast
- 1/2 cup of soy sauce
- 1 teaspoon of onion powder
- 1 teaspoon of garlic salt
- 1 teaspoon of brown sugar
Here's what to do:
- Marinade the chicken for at least one hour-- more time is better
- You can start the chicken in foil on the grill if you want or go straight to the grill. Start indirect (not over coals) for about 12-15 minutes each side then go to direct (over the coals) for the last few (3-4) minutes each side
Pork (BBQ style)
Here's what you need:
- 2-3 lbs of pork
- 3/4 cup of premixed BBQ sauce (We like Ken's)
- The above go into a bowl to be mixed (Prep time is 1-2 minutes)
Here's what to do:
- Marinade the pork for at least one hour-- again, more time is better
- I go straight the grill. Start indirect (not over coals) for about 10-12 minutes each side then go to direct (over the coals) for the last few (2-3) minutes each side
Fish (Lemon, Butter, and Herbs)
Here's what you need:
- 1-2 fillets (trout and tilapia are personal favorites) per person
- 1 teaspoon of butter for each pair of fillets
- 1-2 squeezed lemons
- Dash of parsley (dill or chives for salmon) on each fillet
- Dash of cayenne pepper (optional)
- 3 tablespoons of sherry
- 1 teaspoon of salt
- 1 teaspoon of pepper
- The above go into a foil bowl (shape the foil like a bowl and put a cover on it) to be mixed (Prep time is 2-3 minutes)
Here's what to do:
- Marinade the fish in the foil for at least thirty minutes
- Start the fish in foil (covered) on the grill. Start indirect (not over coals) for about 3-5 minutes each side then go to direct (over the coals) for the last few (1-2) minutes each side with the foil cover off
The above recipe can be done with shrimp too-- cook time goes up by about 2-3 minutes.
Beef (Siskabobs)
This is a personal favorite-- it is just terrible when a piece or two falls off while grilling (Sample time!)
Here's what you need:
- 2-3 lbs of cubed beef
- 1 quartered onion
- 1-2 quartered peppers
- 1-2 dozen cherry tomatoes
- 1-2 dozen mushroom caps
- Metal or disposable wooden sticks/skewers
- Italian salad dressing or olive oil
- 1 teaspoon of salt
- 1 teaspoon of pepper
Here's what to do:
- Spear the meat and veggies, place in a pan, and pour salad dressing and /or olive oil over them. Add salt and pepper. (Prep time is about ten minutes)
- Marinade for at least one hour-- more time is better
- Start the siskabobs on the grill. Start indirect (not over coals) for about 10-15 minutes each side then go to direct (over the coals) for the last few (3-4) minutes each side
Serve with rice.
The above siskabob recipe can be done with chicken, pork, shrimp, and lamb.
These recipes are designed to minimize prep time (Who wants to spend their life in the kitchen or over the grill?) and maximize good eats . . . Enjoy!
