Quick Dinner Idea: Almond Broiled Trout Fillets
It has been a while since I have put up a recipe-- I was thinking about this one today . . .
Here's What You Need:
- 6-8 trout fillets (Time to go fishing . . .)
- 2-3 lemons
- 2-3 tablespoons of sliced almonds
- 1-2 tablespoons of sherry or white wine
- 1-2 tablespoons of butter
- 1 pinch of salt
- 1 pinch of pepper
- 1 pinch of cayenne pepper
Here's What to Do:
- Turn on broiler
- Line a pan with foil and spray with Pam
- Sprinkle salt, pepper, and cayenne pepper on pan
- Put half the sherry on pan and squeeze some lemon juice on as well
- Put fillets flesh side down/skin side up
- Broil about two (2) minutes until fillets curl and Put sliced almonds in plastic sandwich bag and smash with a spoon until crumbs
- Remove pan and flip fillets
- Apply butter, sherry, and more lemon juice directly on fillets
- Sprinkle almond crumbs on fillets
- Return to broiler for about two (2) more minutes-- toast the almonds, don't burn them
Serve with wild and long grain rice and choice of veggie (include a lemon slice for the trout).
