Quick Dinner Idea: Almond Broiled Trout Fillets



It has been a while since I have put up a recipe
-- I was thinking about this one today . . .

Here's What You Need:

  • 6-8 trout fillets (Time to go fishing . . .)
  • 2-3 lemons
  • 2-3 tablespoons of sliced almonds
  • 1-2 tablespoons of sherry or white wine
  • 1-2 tablespoons of butter
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 pinch of cayenne pepper

Here's What to Do:

  • Turn on broiler
  • Line a pan with foil and spray with Pam
  • Sprinkle salt, pepper, and cayenne pepper on pan
  • Put half the sherry on pan and squeeze some lemon juice on as well
  • Put fillets flesh side down/skin side up
  • Broil about two (2) minutes until fillets curl and Put sliced almonds in plastic sandwich bag and smash with a spoon until crumbs
  • Remove pan and flip fillets
  • Apply butter, sherry, and more lemon juice directly on fillets
  • Sprinkle almond crumbs on fillets
  • Return to broiler for about two (2) more minutes-- toast the almonds, don't burn them

Serve with wild and long grain rice and choice of veggie (include a lemon slice for the trout).
