Quick Lunch/Dinner Idea: Homemade Chili in the Slow Cooker


It's getting chilly . . . and it's time for chili. 
I like using the crock pot or slow cooker.  Just set it and forget it!  Perfect for during the week (it cooks while you are at work) or on the weekend.  This is a real favorite with the kids and is a real time and money saver.

Here's what you need:

  • 1-3 lbs. of chopped meat (beef)
  • 1 whole chopped onion
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 can chopped tomatoes
  • 1 can tomato paste
  • 1 package of McCormick Southwest Style chili mix (they nailed the flavor on this one)
  • 1 can dark red kidney beans

At the table-- shredded cheddar, sour cream, Tabasco or other hot sauce, and crackers or bread

Here's to do:

  • Lightly brown the meat in a pan (don't over brown-- it will continue to cook in the slow cooker)
  • Add salt and pepper to the meat as it browns
  • Drain the meat
  • Add all ingredients into slow cooker and stir
  • Set the slow cooker on low and let it go for 5-8 hours

Serve and enjoy.
