Homemade Italian Meatballs

I gave you the Italian gravy in an earlier post

Homemade Italian Gravy.  Here is the homemade meatball recipe-- there is no substitute for the real thing . . . spoil yourself and the kids.

Here's what you need:

  • 2-3 lbs of even mix of beef, pork, veal
  • 1 cup of Italian bread crumbs
  • 1 egg
  • 1/4 cup of grated parmigiana and romano cheese
  • 1 tablespoon of onion powder
  • 1 tablespoon of garlic salt
  • 1 tablespoon of oregano (fresh if possible)
  • 1 tablespoon of parsley (fresh if possible)
  • 1 tablespoon of basil (fresh if possible)
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper

The above go into a bowl to be mixed.

  • 3 tablespoons of olive oil (extra virgin is best)

Mix ingredients and make into balls.  Size matters-- sometimes I do large tennis ball size, but the family seems to prefer golf ball size meatballs.

Here's what to do:

  • Start olive oil in pan on medium heat
  • I usually brown my 4-6 Italian sausages first (add to gravy), then add the meatballs
  • Rotate for several minutes until lightly brown (add to gravy)

Enjoy!
