The Lowly Hard Boiled Egg is Sorely Misunderstood
Hard boiled eggs don't get any respect. They should. They are a good snack (midmorning or afternoon) with salt and pepper. They are great crumbled on salad. They make tasty egg salad sandwiches. Finally, eggs are nutrient dense food which means no wasted calories.
Here's how to properly hard boil an egg:
- Fill a saucepan halfway with water, throw in a pinch of salt, and bring it to a boil
- Lower the heat to medium then put the eggs in
- Set a kitchen timer for 12-14 minutes
- When the timer rings put the saucepan with the eggs in the sink and run cold water over them
- Store in the refrigerator in the shell or peel the shells and serve
Want egg salad?
- Dice up the eggs in a bowl
- Add mayonnaise to desired wetness
- Add salt and pepper to taste
- Optionally add a teaspoon of mustard for Deviled Egg Salad-- add a sprinkle of paprika
- Chill and serve
